Cải rửa sạch. Để ráo nước. Phơi cải dưới nắng khoảng 1 - 2 giờ đồng hồ cho cải hơi héo. Cắt cải thành từng miếng vừa ăn.
Cho 1.3 lít nước, 55g muối và 35g đường vào nồi. Đun với lửa vừa cho đến khi nước muối sôi lên. Tắt bếp. Để nước muối nguội bớt.
Xếp cải vào lọ. Cho hành tím, gừng và ớt vào. Đổ nước muối còn hơi ấm sao cho nước phải ngập mặt cải. Dùng nang tre chèn lên trên mặt cải để cải không nổi khỏi mặt nước.
Đậy nắp lọ. Mỗi ngày nên dùng đũa đảo từ trên xuống cho dưa cải chín đều.
Vào mùa hè hoặc những ngày nắng ấm, sau khi muối khoảng 2 ngày là dưa có thể dùng được. Nếu mùa lạnh thì nên dùng dưa khoảng 4 ngày sau khi muối.
